How to make it
- Preheat oven to 350F (175C) and line a small baking sheet with parchment paper.
- In a small bowl, whisk the egg.
- In another small bowl, mix the crushed crackers with grated parmesan cheese, salt, pepper, and Italian seasoning.
- Coat the chicken breast in the whisked egg, then dip it into the cracker mixture, ensuring both sides are coated.
- Place the coated chicken breast on the prepared baking sheet.
- Bake for 15-20 minutes until chicken is cooked through.
- Remove from oven and top the chicken breast with marinara sauce and mozzarella cheese slices.
- Return to oven and bake for an additional 5 minutes, until cheese is melted and bubbly.
- Optionally, broil for 1-2 minutes to brown the cheese slightly.
- Remove from oven and let it cool for a few minutes before serving.
