How to make it

  1. Preheat oven to 350F (175C) and line a small baking sheet with parchment paper.
  2. In a small bowl, whisk the egg.
  3. In another small bowl, mix the crushed crackers with grated parmesan cheese, salt, pepper, and Italian seasoning.
  4. Coat the chicken breast in the whisked egg, then dip it into the cracker mixture, ensuring both sides are coated.
  5. Place the coated chicken breast on the prepared baking sheet.
  6. Bake for 15-20 minutes until chicken is cooked through.
  7. Remove from oven and top the chicken breast with marinara sauce and mozzarella cheese slices.
  8. Return to oven and bake for an additional 5 minutes, until cheese is melted and bubbly.
  9. Optionally, broil for 1-2 minutes to brown the cheese slightly.
  10. Remove from oven and let it cool for a few minutes before serving.
