How to make it
- Season the short rib with a pinch of salt and pepper.
- Heat 1/2 teaspoon of oil in a small skillet over medium-high heat. Brown the rib on all sides, about 5 minutes, and place it in a small slow cooker.
- In the same skillet, add the remaining oil and sliced onion. Cook until the onion starts to brown, about 3-5 minutes.
- Add the tomato paste, garlic, and thyme, and cook for 1 minute.
- Pour in the balsamic vinegar and cook until reduced, about 3-5 minutes.
- Transfer to the slow cooker and add the beef broth.
- Cover and cook on high for 4 hours or low for 8 hours.
- Transfer the rib to a plate. Boil the liquid from the slow cooker until reduced to a sauce-like consistency, about 5-10 minutes.
- Serve the rib with the sauce, garnished with parsley.
