How to make it

  1. Season the short rib with a pinch of salt and pepper.
  2. Heat 1/2 teaspoon of oil in a small skillet over medium-high heat. Brown the rib on all sides, about 5 minutes, and place it in a small slow cooker.
  3. In the same skillet, add the remaining oil and sliced onion. Cook until the onion starts to brown, about 3-5 minutes.
  4. Add the tomato paste, garlic, and thyme, and cook for 1 minute.
  5. Pour in the balsamic vinegar and cook until reduced, about 3-5 minutes.
  6. Transfer to the slow cooker and add the beef broth.
  7. Cover and cook on high for 4 hours or low for 8 hours.
  8. Transfer the rib to a plate. Boil the liquid from the slow cooker until reduced to a sauce-like consistency, about 5-10 minutes.
  9. Serve the rib with the sauce, garnished with parsley.
