How to make it
- Heat the olive oil in a small pot over medium heat.
- Add the chopped onion and minced garlic. Sauté for a few minutes until the onion is translucent.
- Add the cubed beef stew meat and brown it on all sides.
- Sprinkle salt, and black pepper over the beef.
- Add the chopped carrot to the pot.
- Pour in the low-sodium beef or vegetable broth and canned diced tomatoes.
- Bring the stew to a gentle simmer, then reduce the heat to low and cover the pot.
- Let the stew simmer for about 30-40 minutes, or until the beef is tender and the vegetables are cooked.
- Check the seasoning and adjust salt and black pepper if needed.
- Once the stew is cooked and flavors are well melded, transfer it to a serving bowl.
- Garnish with chopped fresh basil, if desired.
