How to make it

  1. Heat the olive oil in a small pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for a few minutes until the onion is translucent.
  3. Add the cubed beef stew meat and brown it on all sides.
  4. Sprinkle salt, and black pepper over the beef.
  5. Add the chopped carrot to the pot.
  6. Pour in the low-sodium beef or vegetable broth and canned diced tomatoes.
  7. Bring the stew to a gentle simmer, then reduce the heat to low and cover the pot.
  8. Let the stew simmer for about 30-40 minutes, or until the beef is tender and the vegetables are cooked.
  9. Check the seasoning and adjust salt and black pepper if needed.
  10. Once the stew is cooked and flavors are well melded, transfer it to a serving bowl.
  11. Garnish with chopped fresh basil, if desired.
