How to make it
- Prep the chicken: Season the chicken breast with salt and pepper.
- Cook the chicken: In a skillet, heat the olive oil over medium heat. Add the chicken breast and cook for about 5-7 minutes on each side until golden and cooked through. Remove from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add the chopped onion and garlic, cooking until soft and translucent.
- Add spinach: Introduce the spinach to the skillet and cook until wilted.
- Make the sauce: Mix the cornstarch with a little cold water. Pour the milk or light cream into the skillet, bringing to a light simmer. Add the cornstarch mixture to thicken the sauce slightly. Season with nutmeg, salt, and pepper.
- Combine: Return the chicken to the skillet, spooning the sauce and spinach over the chicken. Cook for another 2-3 minutes until everything is heated through.
- Serve: Plate the chicken and spoon over the creamy spinach sauce. Serve hot, ideally with a side of steamed rice or boiled potatoes.
