How to make it

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the vegetables: Chop onions, spinach, and tomatoes into small pieces.
  3. Cook the vegetables: Heat a non-stick skillet over medium heat. Add olive oil and sauté the onions until translucent. Then add spinach and tomatoes and cook until spinach is wilted and tomatoes are softened.
  4. Whip the egg whites: In a separate bowl, whisk the egg whites until frothy. Season with salt and pepper.
  5. Combine everything: Once the vegetables are cooked, pour the whipped egg whites over them in the skillet. Add the chopped cooked chicken breast or turkey breast if using. Sprinkle with chopped fresh herbs.
  6. Cook on the stovetop: Let the frittata cook on the stovetop over medium heat until the edges start to set.
  7. Finish in the oven: Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is set and the top is slightly golden.
  8. Serve: Carefully remove the skillet from the oven and let it cool for a minute or two. Slide the frittata onto a plate, slice, and serve hot.
