How to make it

  1. Peel and thinly slice the cucumber as well as the red onion. Also dice the tomatoes and chop parsley.
  2. In a mixing bowl, combine the thinly sliced cucumber, diced tomatoes, thinly sliced red onion, pitted olives and chopped fresh parsley or basil.
  3. In a small bowl or jar, whisk together the extra-virgin olive oil, red wine vinegar, salt, and black pepper to create the dressing.
  4. Pour the dressing over the salad ingredients in the mixing bowl.
  5. Gently toss the salad to ensure all the ingredients are coated with the dressing.
  6. Taste and adjust the seasoning with additional salt and black pepper if needed.
  7. Transfer the cucumber, tomato, olives and red onion salad to a serving bowl.
  8. If desired, serve with feta cheese. We also suggest you use different colored tomatoes.
