How to make it
- Peel and thinly slice the cucumber as well as the red onion. Also dice the tomatoes and chop parsley.
- In a mixing bowl, combine the thinly sliced cucumber, diced tomatoes, thinly sliced red onion, pitted olives and chopped fresh parsley or basil.
- In a small bowl or jar, whisk together the extra-virgin olive oil, red wine vinegar, salt, and black pepper to create the dressing.
- Pour the dressing over the salad ingredients in the mixing bowl.
- Gently toss the salad to ensure all the ingredients are coated with the dressing.
- Taste and adjust the seasoning with additional salt and black pepper if needed.
- Transfer the cucumber, tomato, olives and red onion salad to a serving bowl.
- If desired, serve with feta cheese. We also suggest you use different colored tomatoes.
