How to make it
- Preheat your oven to 400°F (200°C).
- Separate rosemary and mint leaves from their stems and finely chop only the leaves. Discard the stems. Peel and mince garlic.
- In a small bowl, mix the herbs, minced garlic, salt, and black pepper.
- Rub the mixture evenly on both sides of the lamb chops.
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Add the lamb chops to the skillet and sear for about 2-3 minutes on each side, or until they are nicely browned.
- Transfer the skillet to the preheated oven and roast the lamb chops for about 5-8 minutes, depending on your desired level of doneness.
- Remove the skillet from the oven and let the lamb chops rest for a few minutes. This allows the juices to redistribute.
- Garnish with fresh rosemary sprigs. Serve with lemon for balance and a zesty kick.
