How to make it
- In a small pot, heat the olive oil over medium heat.
- Add the chopped onion andd garlic. Sauté for a few minutes until the vegetables start to soften.
- Add the ground paprika. Stir well to coat the vegetables. Optionally you can also add: dried thyme, dried basil, ground turmeric, and ground cumin.
- Add the rinsed lentils, chopped tomato, low-sodium vegetable broth, and water to the pot.
- Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
- Using an immersion blender or a regular blender, carefully blend about half of the soup until smooth. This helps thicken the soup while leaving some texture.
- Return the blended soup to the pot and stir to combine.
- Season the soup with salt and black pepper to taste. Start with the recommended amounts and adjust as needed.
- Heat the soup for a few more minutes to ensure it's hot and well-seasoned.
- Ladle the healthy lentil soup into a serving bowl.
- Garnish with chopped fresh parsley, if desired.
