How to make it

  1. Preheat your oven to 200°C (390°F).
  2. In a small bowl, mix together the white wine, fresh lemon juice, extra-virgin olive oil, salt, and pepper.
  3. Place the Branzino fillet in a shallow dish and pour the marinade over it. Let it marinate for about 15-30 minutes in the refrigerator.
  4. Heat a non-stick oven-safe skillet over medium-high heat.
  5. Remove the Branzino fillet from the marinade and pat it dry with a paper towel.
  6. Add a little olive oil to the skillet, then add garlic until fragrant. Place the Branzino fillet in the pan, skin-side down.
  7. Cook the Branzino fillet for about 2-3 minutes on each side, or until the skin is crispy and lightly golden.
  8. Once both sides are seared, transfer the skillet to the preheated oven.
  9. Roast the Branzino fillet in the oven for an additional 5-7 minutes, or until it's fully cooked and flakes easily with a fork.
  10. Sprinkle the zest of half a lemon over the cooked fillet for an extra burst of citrusy flavor.
  11. Optional: Garnish with fresh parsley for added freshness and presentation.
