How to make it
- Marinate Chicken: In a bowl, combine chicken cubes with salt, pepper, ginger, arrowroot, and 1/4 tablespoon sesame oil. Mix well to coat evenly.
- Cook Chicken: Heat a skillet over medium-high heat. Add the avocado oil, then the chicken in a single layer. Cook for 5-6 minutes, flipping halfway, until golden brown. Remove chicken and set aside.
- Prepare Sauce: In a separate bowl, mix soy sauce, sweetener, tomato paste, rice vinegar, 1/2 teaspoon sesame oil, sesame seeds, and grated ginger.
- Make Slurry: Combine 1/4 tablespoon arrowroot with 1 tablespoon water in a small bowl.
- Combine Ingredients: Add remaining 1/4 tablespoon sesame oil to the skillet with red pepper flakes and garlic. Cook for 30 seconds until fragrant. Add half of the sauce and cook for 1 minute, stirring. Return the chicken to the skillet, add the remaining sauce, and the arrowroot slurry. Cook for 2 minutes, stirring frequently.
- Serve: Plate the chicken over cooked rice. Garnish with additional sesame seeds and sliced scallions.
