How to make it

  1. Preheat your oven to 200°C (390°F).
  2. Place the boneless, skinless chicken breast on a baking sheet lined with parchment paper.
  3. Drizzle the chicken breast with olive oil, then sprinkle with salt, and pepper.
  4. Spread the diced tomato around the chicken on the baking sheet.
  5. Fold the parchment paper over the chicken and tomatoes to create a packet, and seal the edges tightly.
  6. Roast the chicken in the preheated oven for approximately 20-25 minutes, or until the internal temperature reaches 75°C (165°F) and the chicken is fully cooked and tender.
  7. Once the chicken is cooked, carefully open the parchment paper packet.
  8. Shred the cooked chicken breast using two forks or your hands.
  9. Mix the shredded chicken with the roasted diced tomatoes.
  10. Optional: Squeeze fresh lemon juice over the shredded chicken and tomatoes for a zesty flavor.
