How to make it
- Preheat your oven to 200°C (390°F).
- Place the boneless, skinless chicken breast on a baking sheet lined with parchment paper.
- Drizzle the chicken breast with olive oil, then sprinkle with salt, and pepper.
- Spread the diced tomato around the chicken on the baking sheet.
- Fold the parchment paper over the chicken and tomatoes to create a packet, and seal the edges tightly.
- Roast the chicken in the preheated oven for approximately 20-25 minutes, or until the internal temperature reaches 75°C (165°F) and the chicken is fully cooked and tender.
- Once the chicken is cooked, carefully open the parchment paper packet.
- Shred the cooked chicken breast using two forks or your hands.
- Mix the shredded chicken with the roasted diced tomatoes.
- Optional: Squeeze fresh lemon juice over the shredded chicken and tomatoes for a zesty flavor.
