How to make it
- Microwave ancho and pasilla chiles with garlic and 1 tablespoon water until soft, 2-3 minutes. Stem and seed chiles; peel garlic.
- Transfer to a blender.
- Add chipotle, onion, 1/2 tablespoon olive oil, honey, vinegar, 1/2 teaspoon salt, and oregano to the blender; puree until smooth.
- Heat remaining 1/2 tablespoon oil in a skillet over high heat.
- Add chile sauce and cook, stirring, until thickened, about 5 minutes.
- Add broth and simmer until slightly thickened.
- Season pork with salt and pepper.
- Place in a slow cooker with bay leaf and cinnamon stick.
- Pour sauce over pork. Cover and cook on high until tender, about 5 hours. (Alternatively, cook in a covered Dutch oven at 350°F for 1 hour 45 minutes; uncover and cook 30 more minutes.)
- Discard bay leaf and cinnamon stick. Shred pork with forks; season with salt and pepper.
- Serve in tortillas with chopped tomato and avocado.
