How to make it
- Peel the sweet potato and cut it into chunks.
- Bring water to a boil and add the sweet potato chunks. Cook until they are fork-tender, around 10-15 minutes.
- Once the sweet potato is cooked, drain the water.
- Return the saucepan to the stove over low heat.
- Use a potato masher or a fork to mash the sweet potato until it's smooth and lump-free.
- Add the oat milk and coconut to the mashed sweet potato and stir well to incorporate.
- Add cinnamon, nutmeg, and salt to the sweet potato. Mix thoroughly until all the ingredients are well combined.
- Adjust sweetness by adding optional honey or syrup.
