How to make it

  1. Preheat the oven to 425°F (220°C) and lightly grease a small baking sheet with cooking spray or a small amount of oil.
  2. In a small bowl, combine the chia seeds and water, then let it sit for 5 minutes until it forms a gel-like consistency.
  3. Place the drained chickpeas in a food processor and pulse until they are broken down but not fully pureed.
  4. Add the chia mixture, oats, tomato paste, basil, garlic, fennel seeds, and red pepper flakes to the food processor. Blend until everything is well combined. If the mixture feels too dry, add a bit of the reserved chickpea liquid (1 tablespoon at a time) to reach the desired consistency.
  5. Season with salt and pepper to taste, then shape the mixture into 4 small meatballs.
  6. Place the meatballs on the prepared baking sheet and bake for 10 minutes. Flip the meatballs and bake for another 8-10 minutes, or until they are golden and firm.
  7. Serve with your favorite sauce and enjoy!
