How to make it
- In a small pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 2-3 minutes until softened.
- Add the minced garlic for another 30 seconds until fragrant.
- Add the diced zucchini to the pot and sauté for about 2-3 minutes, allowing it to slightly soften.
- Pour in the low-sodium vegetable broth and 1/4 cup of water. Bring the mixture to a simmer.
- Cover the pot and let the soup simmer for about 10-15 minutes, or until the zucchini is tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth. Be cautious when blending hot liquids.
- Return the blended soup to the pot and place it back on low heat.
- Season the soup with the specified amount of salt and black pepper. Taste and adjust the seasoning if needed.
- Once heated through, remove from heat.
- Ladle soup into a serving bowl.
- Garnish with fresh herbs, such as chopped parsley or chives.
