How to make it
- Cook the spices: Heat the olive oil in a small pan over medium heat. Add the cumin seeds, onion, green chili, garlic, and ginger. Cook until the onions are soft and golden.
- Add dry spices: Stir in the turmeric, garam masala, and a pinch of salt. Cook for another minute until fragrant.
- Simmer tomatoes: Add the chopped tomatoes to the pan, reduce the heat, and let it simmer for about 10 minutes until it thickens slightly.
- Prepare eggs: Make two wells in the tomato mixture and crack an egg into each well. Cover and cook over low heat for about 6-8 minutes, or until the eggs are cooked to your liking.
- Garnish and serve: Sprinkle with chopped coriander and serve hot with a side of cooked rice.
- Optional: Add homemade toasted breadcrumbs with Indian spices like cumin, coriander, and a bit of chili powder.
