How to make it
- Preheat the oven to 350°F (175°C). Line a muffin tin with one muffin liner or lightly grease it with cooking spray.
- In a small bowl, combine the oat flour, almond flour, baking powder, baking soda, salt, and sweetener.
- In another bowl, whisk together the egg white, applesauce, Greek yogurt, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Gently fold the blueberries into the batter.
- Pour the batter into the prepared muffin tin.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
- Let the muffin cool in the tin for a few minutes, then transfer it to a wire rack to cool completely.
