How to make it

  1. In a blender or food processor, combine the rolled oats, mashed banana, egg, baking powder, vanilla extract, yogurt and a pinch of salt. Optional: add low-fat cottage cheese or greek yogurt.
  2. Blend the ingredients until you have a smooth batter consistency.
  3. Preheat a non-stick skillet or griddle over medium-low heat.
  4. Lightly grease the skillet with cooking spray or a little oil.
  5. Pour a portion of the pancake batter onto the skillet, forming a round pancake shape. You can make one large pancake or a few smaller ones.
  6. Cook the pancake(s) for about 2-3 minutes on each side, or until they are lightly browned and cooked through.
  7. Once the pancakes are cooked, transfer them to a plate.
  8. Optional: Top the pancakes with fresh berries or sliced fruits for added natural sweetness and extra nutrients.
  9. You can also drizzle a small amount of sugar-free syrup, agave or honey.
